Bread Bins And Storing Bread

 I just adore freshly baked bread, not shop bought but homemade, usually from a bread machine though not invariably, sometimes kneading dough manually is pleasurably therapeutic. If your mixer features a dough hook, you carry on and add flour in 1/4 cup measurements until a dough has formed under the hook and cleans the inside with the bowl.  If it's sticky, add sprinkles of flour.  Knead for ten mins.  If doing this yourself, operate in the flour in 1/2 cup measurements, stirring in the beginning, then working it yourself.  This would have been a shaggy mass, so you'd want to turn this onto a work surface and knead with the aggressive "push-turn-fold" motion.  If dough becomes sticky, add sprinkles of flour.  Now and then, chuck the ball dough hard against the work surface, which encourages development in the dough.

Things like this will get lucky and the best of us, but what I wish to demonstrate with this particular story is bread making can be a forgiving art. Add a a bit more with this, a little less of this, and you still have a very good loaves of bread. After that episode of forgetfulness, I got thinking. I tried making the bread with just a half stick of butter as well as eggs. It ended up great. I substituted 2 cups whole-wheat flour for section of the flour plus it was great. I wondered any alternative things I could do with this original recipe.
